The National Health Commission and the State Administration for Market Regulation jointly issued the GB31654-2021 National Standard for Food Safety General Hygiene Standards for Catering Services (hereinafter referred to as the standard), which will be formally and comprehensively implemented on February 22, 2022. The standard stipulates the basic requirements and management guidelines for food safety in food procurement, storage, processing, supply, distribution and cleaning and disinfection of food (drink) utensils, food containers and tools. The standard is applicable to all kinds of catering service activities conducted by catering service operators and canteens of centralized dining units. If it is necessary to formulate special health norms for certain catering service activities, the standard shall be used as the basis. This standard is of great significance for improving the safety level of China's catering industry, ensuring the safety of consumers and adapting to the growing demand of people's catering consumption.
Standard 4.3 requires that the capacity and quantity of facilities and equipment for cleaning, disinfection and storage of tableware should meet the demand.
Standard 9.1.1 Tableware should be cleaned and disinfected after use (refer to Appendix B for methods). Encourage the use of physical methods such as heat to disinfect appliances. 9.1.4 Disinfected table utensils should comply with GB14934.
Appendix B Guidelines for cleaning and disinfection of tableware
Steam boiling can be used for disinfection, should be kept in steam or boiling water for more than 10 minutes.
Infrared disinfection cabinet can be used for disinfection, which should comply with the operating instructions of the equipment. Generally, the disinfection cabinet should be opened for more than 10 minutes.
Heat disinfect dishwasher can be used, should comply with equipment instructions.
Chemical disinfection can be used, such as chlorine containing disinfectant, chlorine dioxide disinfectant, disinfection concentration and time according to the product instructions.
